It started with guy named Calvin

It it all started with a guy named Calvin. When I was a kid, although I learned how to make almost everything from my grandmother, I had never really had barbecue. My next-door neighbor, well three doors down anyway was from a small place called Gaffney, South Carolina. And he made these ribs. They were the best thing I’ve ever tasted in my entire life.

Jumping forward to my collegiate years I ended up at a school in Western North Carolina, called Wake Forest University. Located in Winston-Salem North Carolina the first barbecue I tasted down there tasted like what I remembered Calvin made. So I set out to eat as much of it as humanly possible during my four years.

Over the past 2 1/2 decades, I have taken what I tasted down there and worked on it constantly to develop the authentic flavors you’ll only get at a “roadside shack” on the edge of Route 40. My love of Carolina BBQ runs deep, it is the purest expression of the barbecue form and one that I am proud to call my own.
